Entrees

Susan’s Curried Plantain

1 tsp tumeric
1/2 tsp cumin
1 tsp ground coriander
1/4 tsp chili’s (black pepper optional)
1/2 tsp salt
1 — 2 large tomatoes, chopped
1 large onion, chopped
2 Plantain bananas
2 garlic cloves, minced
1/2 cup water

Directions:
1. Saute onions and garlic.
2. Add tomatoes and remaining ingredients, until a paste is formed. Slice plantains and add to paste.
3. Add 1/2 cup water and cook on low heat.
4. Simmer for a little while. Serve with rice.

Sigrid & Guy Curried Chick Peas with Onions

2 Tbsp olive oil
2 onions, thinly sliced
2 cloves garlic, minced
2 Tbsp brown sesame seeds (opt.)
1 Tbsp curry powder (or to taste) or paste
2 (16 oz.)cans chickpeas
3 Tbsp lemon juice (opt.)
1 Tbsp Bragg’s aminos
3 Tbsp chopped fresh parsley
Salt to taste
Serve with brown rice

Directions:
1. Cook onion and garlic in oil in a large covered frying pan until soft. Stir in sesame seeds and curry.
2. Cook uncovered for a couple of minutes.
3. Drain chickpeas, and add chickpeas and 1/2 c water to pan.
4. Cook stirring often over medium heat until almost all liquid has evaporated.
5. Stir in Bragg’s aminos and parsley.
6. Season with salt or more bragg’s to taste.
7. Cook 5 minutes longer.
Serve hot over rice.

Hildegard Cream of Wheat Dumplings

1/2 cup milk
1 tsp butter
4 Tbsp Cream of Wheat
I Egg
1 pinch of salt

DIRECTIONS:
1. Bring milk, butter and salt to a boil.
2. Remove from heat and stir in Cream of Wheat.
3. On low heat stir mixture constantly until it forms a ball.
4. Stir in egg gently.
5. With two teaspoons, form small dumplings, dropping them into simmering vegetable broth and let them puff.
6. Do not overcook or boil.
7. Add fresh parsley to soup and serve.

Allana’s Chicken-Fried Tofu Triangles

14 oz. extra-firm tofu, drained and pressed dry
1/2 cup cocktail sauce
2 Tbsp soy sauce
1 tsp garlic powder
1/4 cup canola oil
1 1/2 cups crumb coating, such as panko

Directions:
1. Cut tofu in half width wise.
2. Cut each half into three planks about 1/2 inch thick.
3. Cut each plank into 2 triangles.
4. Mix cocktail sauce, soy sauce and garlic powder.
5. Heat oil in a small sauté pan until medium hot.
6. Dip each triangle on all sides in sauce mixture.
7. Spread crumb coating on a small plate and press triangles into coating.
8. Place in pan and cook about 3 minutes on each side, or until well browned.

Andrew’s Cauliflower Casserole

1 medium cauliflower (cooked & drained)
1 Tbsp flour
2 eggs
1 cup sourcream
1 tsp tumeric power
Pinch of black pepper
1 tsp chicken like seasoning or Vegeta
Pinch of salt if needed
2 cups bread cubes
1/2 cup cornflakes

Directions:
1. Mash the cauliflower in a mixing bowl. Beat the eggs in mixing bowl.
2. Then mix in the sour cream into it. Finally add flour, tumeric, Vegeta and the black pepper.
3. Now add the cauliflower and mix gently. Add bread cubes as desired to prevent runniness or dryness of the whole mix.
4. Place the mixture in a greased glass dish.
5. Sprinkle the top with crumbled corn flakes and tiny cubes of butter all over the casserole.
6. Bake on 350° for 25-30 min till the edge of the casserole turns golden brown.

Norma’s Cauliflower and Broccoli Bake

2 cups cauliflower florets
2 cups broccoli florets
2 eggs
1/2 cup mayonnaise
1 medium onion, chopped
1 can cream of mushroom soup, undiluted
1 cup cheddar cheese, grated
1/2 cup butter/margarine, melted
1 pkg croutons or bread crumbs

Directions:
1. Preheat oven to 350 F
2. Cook vegetables in salted water for 5 minutes.
3. Place cauliflower and broccoli in lightly buttered 11”x7” dish.
4. Beat eggs, add mayonnaise, onion, soup and 1/2 grated cheese.
5. Pour over vegetables.
6. Sprinkle rest of cheese, press down.
7. Pour melted butter.
8. Spread croutons/bread crumbs
9. Bake 4O minutes.

Una’s Bulgar and Flax Pilaf

2 Tbsp soya margarine
1 cup bulgar wheat
1/4  cup flax seed
1/3 cup onion, minced
1 small tomato, diced
2 cups vegetarian chicken favoured broth
1/2 tsp salt
¼ tsp crushed rosemary or 1 tsp fresh, chopped

Directions:
1. In medium saucepan, over medium heat, melt margarine.
2. Add bulgar, flax seed and onion.
3. Stir until bulgar is golden brown and flax is turning dark, about 3 minutes.
4. Stir in tomato, vegetarian chicken broth, salt and rosemary.
5. Cover, heat to boiling, reduce heat and simmer for 15 minutes.
6. Turn off heat, remove lid and fluff up pilaf with a fork.
7. Let rest 10 minutes before serving.

Ruth’s Broccoli Casserole

1 broccoli stalk, steamed
1 can mushroom soup
1 onion, chopped
1/2 cup mayonnaise
1/4 cup milk
1 egg
Bread or cracker crumbs
Grated Cheese (Cheddar)

Directions
Mix together all ingredients except the bread crumbs and cheese.
Place in a casserole and sprinkle with bread or cracker crumbs and
cheese.
Bake at 350 degrees for 35 minutes

Becky’s Bowtie Pasta with Roasted Red Pepper Sauce and Baby Spinach

4 red peppers, seeded and chopped
1 large onion, chopped
1 head garlic, peeled, whole cloves
3 Tbsp olive oil
2 Tbsp fennel seeds
Salt and pepper
1 lb bowtie pasta, cooked and drained.

Directions:
1. Preheat oven to 350 ° F. Place peppers, onion & garlic cloves into a 9” x 13” baking pan.
2. Drizzle with olive oil, add fennel seeds, salt and pepper and toss well.
3. Put in oven and roast for 45 minutes, or until soft and caramelized.
4. Pour vegetables into a medium saucepan and puree with an immersion blender, adding a splash of water to help along.
5. Check for seasoning, add salt and pepper to taste. Toss with cooked pasta.
